JOB OVERVIEW:

Beit-CURE Hospital, Malawi is looking to fill the position of Assistant Lead Chef. Under the supervision of the Lead Chef, the Assistant Lead Chef will assist in managing daily operations in the kitchen. He/She will oversee and manage stock levels as well as supervise kitchen staff during shift. He/She will also oversee the food preparation process as well as ensure that appropriate standards and hygiene are adhered to.

JOB FUNCTIONS:

  • To work with the kitchen team to produce food for the unit to a high standard on a daily basis to patients, guardians, staff and guests.
  • To take responsibility for the daily paperwork with regards to ordering.
  • To assist the Head Chef with ordering and menu planning.
  • To ensure that cooking, storage and serving areas are cleaned as per the cleaning schedule.
  • To ensure that the kitchen stores and other potential areas of loss are secured at all times according to laid down instructions.
  • To cover all duties normally assigned to the Head Chef in their absence. 8. To carry out any reasonable requests made by your line manager
  • To take responsibility for the adherence & compliance of all food hygiene legislation.
  • Have a full understanding and knowledge of food safety law.
  • To report and, where possible, to attend to and take all necessary action, statutory and otherwise, in the event of accident, fire, loss, theft, lost property, damage, unfit food or other irregularities and complete the necessary return and/or report.
  • To ensure cooks use the correct portion size and understand the content of dishes
  • Reporting of any maintenance work to be done in a timely manner.

EDUCATION/EXPERIENCE REQUIREMENTS:

  • Diploma in Food Production/Practical Cookery, those with a degree in the same or similar field will have an added advantage.
  • Over 5 years of experience experiencer in food management and cookery in a busy environment, those with hospital experience will have an added advantage. 
  • Computer literate with experience using Microsoft word.

  • Good organizational skills, working within a team or individual initiative
  • Physical ability for working in the hot kitchen environment with noisy conditions.
  • Flexibility and adaptability to the requirements of the service
  • Professional conduct with respectable customer care
  • Ability to be creative and develop own recipes.
  • Compassion.
  • Good physical stamina and strength to handle manual tasks.
  • Effective communication and interpersonal skills.
  • Flexibility to work on weekends or outside regular working hours for emergencies or special projects.
  • Ability to use negative feedback to improve.
  • Willingness to learn.
  • Ability to work under pressure.
